It’s more of a hack than a recipe because it’s just that easy!
So let’s talk about Chanukah cookies. When did that become a thing? We have Chanukah donuts (yumm!), sufganiyot and Chanukah Latkes. We even have a custom to eat dairy on Chanukah. But cookies? They were never part of it as far as I know.
Who doesn’t love cookies, though, am I right?
Right. So there’s no symbolic reason to make cookies, but these are so fun and easy to make, that we don’t really need a reason!
Okay, get ready for this. We don’t actually need to make cookie dough! All we need to do is buy ready made pastry dough (if you don’t have where you are you can make the dough of course, but this is the hack!)!
The dough I buy is called “Sweet Short Pastry” dough. It’s available everywhere in Israel in the freezer section. The key is defrosting the dough the perfect amount. It can’t be too frozen because it will crack, and it can’t be too soft because the cookie shapes won’t come out. But not to worry, this is a very forgiving dough. If it’s left out too long I just stick it into the fridge for a bit to harden up.
Once the dough is the perfect consistency, you just open the plastic roll and spread it out. YOU DON’T EVEN NEED TO ROLL IT OUT!
Get out your cookies cutters and have fun!
Here I’ll give you two different Chanukah cookie ideas.
The first, and classic, dreidel cookies dipped in chocolate and sprinkled with sprinkles! All you need is dreidel cookie cutters, chocolate chips and sprinkles. We like colorful chocolate filled sprinkles, but you can use blues and white in keeping with the Chanukah theme.
When you’re done with the chocolate and sprinkles you’re going to need to transfer the cookies to the fridge, so I recommend starting off with a baking sheet on a cutting board. This way, when it’s time to move the cookies they are on a sturdy surface and can easily be moved.
Once your cookies are out of the oven and cooled down, melt your chocolate in the microwave or over a bain marie. Then you or your little helpers, can dip each cookie into the melted chocolate, place on the baking sheet and sprinkle on the topping.
Place in the fridge for about half an hour, and enjoy!
The second idea is less classic, more cutesy! Since we know Chanukah is the festival of donuts (lights?) I decided to try making “donut” cookies. Or cookies that look like donuts, so cute!
Here, instead of the dreidel cookie cutter we use 2 circle cutters, or if you don’t have a really small circle cutter, you can use the bottom of a piping tip, which was the perfect size for my cookies donut holes.
So first, you spread out your pastry dough, and using a small-medium round cookie cutter (a glass works as well) cut out circles, those are your donuts. Then using the tiny circle cutters (or piping tip) to cut out a smaller circle in the center of the donut, your donut holes.
While the donuts are baking and cooling, melt some chocolate. These cookies get dipped into the chocolate to cover the whole top surface and sprinkled with sprinkles.
