Family dinners at home are usually reserved for Friday nights. We have a huge Shabbat meal and all sit around the table. The usual. During the week though it’s rare that we eat together because we all have different schedules.
Y – (3.5 y.o) is exhausted from a long day at pre-school and is usually in bed by 6. N- (6) is always out riding his bike with friends and the others have after school activities at those hours.
Most nights I have to get creative about preparing something for dinner that can be eaten at different hours throughout the evening. One of our favorite ways to do dinner, is to have breakfast for dinner! Breakfast for dinner is such a good solution for us. Sometimes we have cereal with milk (Y’s favorite), or eggs different ways, French toast is another favorite and of course there are pancakes!
I’ve never met a person who doesn’t love pancakes! The classic way to make pancakes is obviously the best, fried in hot butter, flipped on both sides. Crispy on the outside, fluffy on the inside. YUM!
But, you know, life.
Who really has the time to stand by the stove flipping pancakes for a family of 7?! Not I. Whipping up the batter takes only a few short minutes and only dirties 1 bowl, so that part is ideal for dinner time. But the frying and the flipping? Had to go.
Baked Pancakes. The answer to all my problems. All I have to do is whip up my regular pancake batter, spray a 9×13 baking pan with PAM and pour the batter into the pan. Bake for 12-15 minutes and we’re done! How easy is that?!
When there’s no time and hungry mouths to feed, just slice and serve. Top with some maple syrup or demerara sugar. Dinner, done!
But, when you have an hour after pre-school to entertain a tired, hungry little person. Well, anything can happen. That’s when the creativity comes out.
Little helper + easy recipe + fun cookie cutters and toppings + handful of patience = recipe for success.
Once the pan comes out of the oven and the pancake cake cools the fun begins.
I had my little helper cut fun shapes out and then we covered some shapes with Nutella and sprinkles and others with fresh fruit shapes, we used mango and dragon fruit.
You guys! You really must try this. The pancakes are so good and the process is so much fun (and easy!). Get your little helpers in the kitchen, sleeves rolled up and hands washed. Dinner will be ready before you know it.
Who says you can’t play with your food?
Baked Pancakes Recipe
3 tsp baking powder
½ tsp salt
1 ½ cups milk
3 Tbls butter, melted
Nutella Spread, Sprinkles, Assorted Fruit
Pre-heat oven to 350°F.
In a large mixing bowl, add all the ingredients except for the toppings. Whisk together until just incorporated. Don’t over mix.
Spray a 9×13 Baking pan with non-stick spray and pour in batter. Bake for 12-15 minutes until edges are slightly browned.
Using cookie cutters cut shapes out of the pancake, cover some with fruit and some with Nutella and sprinkles.
